Fatty Acid Profile, Lipid Quality and Squalene Content of Teff (Eragrostis teff (Zucc.) Trotter) and Amaranth (Amaranthus caudatus L.) Varieties from Ethiopia

Teff and amaranth are gluten-free cereals with significant nutritional health benefits. However, they underutilized known in limited areas of the world. The present study evaluated fatty acid profile, crude fat, squalene content lipid quality seven teff (Eragrostis (Zucc.) Trotter) three (Amaranthus caudatus L.) varieties from Ethiopia. fat ranged 2.92 to 3.34% (averaging 3.06%) 8.28 9.21% 8.6%) for amaranth, respectively. Linoleic, oleic palmitic were predominant both accounting approximately 89 85% total content, saturated unsaturated acids ratio 0.30 0.32 0.38 0.40 amaranth. parameters used describe quality, i.e., thrombogenicity atherogenicity indices, show that was superior over suggesting a preference former healthy food formulation. white (486.54 mg/100 g DM) significantly higher than other two (327.54 340.81 DM red brown respectively). In general, crops should be exploited their potential as ingredients development novel functional foods.
